Description

In our nearly 4-hour workshop, you will learn a sourdough bread-making method that lets you bake crispy-crusted, open-crumbed, soft loaves right in your own oven. Our focus is on dough mixing, long fermentation and dialling in the optimal baking settings.

In a family-friendly, small-group environment you will master the steps and movements we have refined through extensive research and practice. Our unique method is optimised for simplicity, efficiency and achieving a wonderfully airy crumb.

Each participant will hand-mix a 960 g wild-sourdough bread dough to take home and shape and bake later. To practise the shaping technique, we use dough mixed that same morning and proofed by class time – you take that home in a proofing basket too. We also bake loaves together from dough prepared and cold-proofed the day before, and share them at the end of the workshop.

We demonstrate spiral-arm machine mixing and our home grain mill, used to produce freshly milled flour. You will receive our 100+ year-old mother sourdough starter culture to continue nurturing at home.
