In our nearly 5-hour workshop, you will learn a method that allows you to make restaurant-quality, easily digestible and incredibly delicious pizza at home. Our focus is on dough preparation, fermentation and setting the optimal baking parameters. We show you – and you try it yourself – what Neapolitan-style pizza tastes like baked in a traditional home oven and a professional pizza oven. In our family-friendly, small-group sessions you will master the steps and techniques we have developed over years of research and practice. Our unique method is optimised for simplicity, efficiency and achieving an airy dough. In addition to demonstrating the tricks of handling high-hydration dough, we also explain the theoretical background of the fermentation processes. The knowledge you gain here will give you a solid foundation to start baking pizza at home. Each participant hand-shapes 3 pizza dough balls to take home and bake later. First, we bake pizza for you from dough prepared the day before – then it’s your turn. You can bake two pizzas on-site (in the pizza oven and a home oven) and take one home – we provide the pizza box! You can also take home the tomato sauce you make yourself, along with the complete method guide.

Sourdough Bread Workshop

35,000 HUF/person (+ gift: proofing basket, mixing bowl, spatula, bread lame, active sourdough starter)

In our nearly 5-hour workshop, you will learn a sourdough bread-making method that lets you bake crispy-crusted, open-crumbed, soft loaves in your home oven. Our focus is on dough preparation, fermentation and optimal baking settings. We show you – and you try it yourself – what wild sourdough bread baked in a traditional home oven tastes like. In our family-friendly, small-group sessions you will master the steps and techniques we have refined through extensive research and practice. Our unique method is optimised for simplicity, efficiency and achieving an airy crumb. Each participant hand-mixes a 960 g wild-sourdough bread dough to take home and shape and bake later. We also bake loaves together from dough prepared the day before and share them at the end of the workshop. We demonstrate spiral-arm machine mixing and our home grain mill. You will receive our 100+ year-old mother sourdough starter culture and the complete bread-making guide.
